I Am 49, and Just Learned How to Cook a Chicken Breast

I can not believe I just learned this. I am 49, and I just learned how to cook a chicken breast. My husband and I work from home, our Airstream, and on occasion the side of the road in our truck. We have a very casual life. Very mobile. We were recently in Palm Desert. This was before everything. I had a dentist's appointment. We went over in the Airstream for some golf and self-care. The next day California shut down. I had some supplies in the trailer but was not fully stocked up. I tried to go to the health food store and they were out of so much. It was stressful, to say the least. We were only in Palm Desert two more days so we made due. I had breakfast stuff and snacks. The second day we decided to try to take away from this little restaurant we found. It is called El Paseo Grill. It is worth the stop. Husband and wife. He works the front of the house and she works the back of the house. Grass-fed meats. Organic. My kind of place.We had to wait for our turn outside to order. We thanked him for being open. He responding he would be open as long as they would let him. He brought our take away to our truck and we drove up the hill to the base of the mountains to eat our lunch.Stacy had the Best Bacon Burger. Stacy declared it was the best burger he had ever had. Okay. Nice.I had vegetable soup, fries, a chicken breast, plain, no seasoning. It was some of the best soup I had ever had and the chicken was correct. Clean, moist and delicious. I recommend the support of this small business. Food Done right.     Fast forward to "shelter in place," "safer at home," and "social distancing" I am trying to change up the menu a little more. Three of us are eating two or more large meals at home now. Take away is rare. Starbucks is a thing of the past. Driving anywhere seems useless. Our days are filled with easy relaxing meals and walks in are an amazing new community.What to cook? What will be available at the health food store to purchase? Last week they were completely out of chicken. Today eggs. So I bought some chicken breasts determined to recreate the delicious chicken I had. I had to learn. First, the chicken was thin. I had to learn how to butterfly chicken. Easy. Now, how do you cook a butterflied chicken breast? I had to learn. Easy.First, you prepare the butterflied chick breast. Place the chicken breast between two pieces of parchment paper and beat it. This makes the chicken flat. It was amazing.Next, coat the chicken with Organic, Extra Virgin, Olive Oil, Pacific Flake Sea Salt, and a sprinkle of Organic Turbinado Brown Sugar. You could use orange juice or even honey to add flavor.Preheat your grill or skillet. I like to cook with cast iron. Cook the chicken about six minutes aside. It has changed everything. Soft, juicy and quick. Stacy said he might even try it because it was thin. He does not like chicken. I told him he probably has never had chicken cooked properly. It makes all the difference, knowing how to prepare the food. I just wanted to share this story. Everyone in the house was so excited.
