Happy Spring Everyone! A time of renewal and rebirth. Spring is a great time of year. Flowers emerge. Trees open up and the landscape becomes dark, rich, green. New energy. Longer hours outside. The sun is warm and bright. Spring showers are light and welcome to clean away pollen. This rich time is short here in California. Soon summer comes. Spring is meant to be savored. Warmer weather for me welcomes back juice. I would rather drink my greens. I don’t juice as much in the winter. My thin frame craves soups to stay warm. I use a VitaMix for whole food juice. It is easy. Easy to make juice and easy to clean up. When we travel, a nice selection of bottled juice is available at almost any market now. The juice is a great pick me up.I like cold-pressed juices and sometimes I just strain the juice from the VitaMix. My VitaMix is loud and my family says it sounds like a jet engine. I shout out, “loud noise” before I turn it on. It does the job. It also makes great smoothies. Green Juice in the VitaMix

1-Organic Green Apple 2 or 3 handfuls of Organic Green Mix.

Fill the bottom of the blender with water to cover the blades. Cut the green apple into quarters and remove the seeds. I also peel the apple. This is optional. The peel will make the juice a little bit thicker. Add 2 or 3 handfuls of the green mix. I use an organic, bagged, green mix that contains spinach, kale, & chard. Put on the lid and blast away until the greens are smooth. I have a smoothie setting on my VitaMix, but just blend until it looks good to you. I do not strain. I have a reusable cup with a lid and straw. If you do not drink your juice right away it will separate. Just shack it a bit. The bottom will have the thick bits. I just stuck them up. Get all the nutrients you can.

Apple Carrot Juice in a VitaMix

1 Organic Green Apple 3 Organic Large Carrots

Fill the bottom of the blender with water to cover the blades. Quarter the apple and remove the seeds. Peel the apple, if you like. Peel the carrots and chop into pieces about 2 inches long. I discard the tip and the top. I peel the carrots because Julia Child said the peel makes the carrots taste bitter. So I always peel all the carrots. Put on the lid and blast away. You may want to strain this juice or blend it twice. The carrots can be a little chunky. Another option is to add orange juice. This is one of my favorite juices. I have also had it with pineapple juice. This juice is like sunshine is a cup. I love it in the summer over ice. This juice will separate also. Just shake it to mix it back up.

As I write this I am sitting on my balcony, drinking my Green Juice, watching the Sun Tea turn a light, golden orange in the warm sun. Go outside. Get your Vitamin D. Savor the moment.
