What’s on the Table at Pacific Flake

Hello everyone. I am lost in the days and I seem to have lost an entire month. I can't believe it's already June. Local harvest is starting everywhere and I have got a jump on it.

A couple of months back I made the big investment to buy a freezer. Filling it up is also a big investment. I have been working on both a little at a time. I have been buying local meat from small farms and buying frozen fruit and vegetables from a local health food store that supports local farms and makers.

I am trying to stay balanced with the meat and produce. It has been a challenge. Yesterday I went to a chain health food store and they had half the organic produce it usually does. So I got some from frozen vegetables instead and some of my new favorite non-dairy ice cream. I am finding it so much easier for me to just shop at home. Having the freezer has really helped.

A few weeks back, I found this turkey at Costco. So I stocked up.

Here is one way I store it. I make Turkey Apple Patties

Turkey Apple Patties

1 lb ground turkey, ground chicken or ground pork

1 Apple, diced

Pacific Flake Sea Salt

Optional cinnamon, black pepper, red pepper flakes

Dice one Apple. I have used all kinds. It all tastes so good.

Mix the diced apple with the ground turkey.

Add the seasoning you like. I always add Pacific Flake Sea Salt, it brings out the flavor of the apple. Form the size patties you like. I make my patties smaller for breakfast patties. You can make them larger for a main meal.

Then I put them in a labeled zipper bag. It can be hard to tell the difference between turkey, chicken, or pork after it has been frozen.

After talking with my sister-in-law about freezing food, she recommended a vacuum seal machine. I did some research and I now have a vacuum seal machine on the way. Zipper bags are great for short term freezer storage, but I have learned that in the long term the meat can dry out. It gets a thing called freezer burn. I want to protect my food investment. I also need long term storage.

We travel a lot in our Airstream for business and for fun. We average being gone about two weeks a month. We take food with us, but that means the food turn over is not as fast. A vacuum seal machine it is. It will be here next week. I will let you know how it goes.
