What's on the picnic table?

Traveling, day tripping, or a fun lunch in the backyard, here is what's on the table at Pacific Flake.

I recently purchased a picnic basket. I keep it packed up & at the ready. Inside is large paper plates, small bowls, paper towels, ziplock bags(for leftovers), handy wipes(yes, I still have baby wipes with me at all times. Life is messy.), plastic forks, knives, & spoons. I keep the plastic ware in zip locks to keep them tidy, but you could keep a rubber band around them.

Always, the Pacific Flake. I carry a bag in my purse, too. Pacific Flake turns an average lettuce wrap into something to savor. On the lid of the picnic basket, I rigged some rubber bands to secure a trash bag. Some places we go do not have a trash or the trash is overflowing. Be a good steward. Pick up your trash.

Don't have a picnic basket? No problem. For years I used paper and plastic bags to store our treats. My parents used a cardboard box. I don't know why I didn't do that. Besides the cardboard box doesn't roll around when driving. I also have those fancy zippered cold storage bags. Whatever you have available will be fine. Just pack up nutrient-dense food to keep you at your best when on the road. Don't forget the water. We always have a flat of water with us at all times.

Lettuce Wraps (recipe below)

Sardines packed in extra virgin olive oil.

Crackers. Not for me.

Cornichons. They are a French pickle used with sandwiches. They are a little strong, but I love them.

Potato chips. 

Fruit. It is a great dessert & fruit is hydrating.

Iced tea

Cocoa covered almonds. Not for me.

Some sort of peanut, sesame stick mix my husband likes. Not for me.

Digestive enzymes

Vitamin B. I take it after the mid-day meal. Sublingual.

Kind Bars. Not for me.

Lettuce Wrap Recipe

Romaine Lettuce-You may need several heads of lettuce, depending on how many you will be feeding. The boys eat about three leaves each. I eat two leaves. I have used Butter Lettuce before, which was delicious & I prefer on my fish taco, but I like the crunch of the Romaine. Some people find Romaine to be bitter. Butter Lettuce is mild. Make lettuce wraps at home. Experiment with different lettuce. I find that the Romaine travels very well. The Butter Lettuce bruises easily.

Bacon-I bake the bacon the day before and keep it refrigerated. We are a big fan of Beeler's Hickory Smoked Uncured Bacon.

Turkey, Ham, Salami-We all eat something different?

Cream Cheese-We use cream cheese instead of mayonnaise. I liked whipped cream cheese. You can get fancy and get some flavored cream cheese.

Mustard

Avocado

Pacific Flake  

Lettuce wraps are quick. I lay the lettuce leaves out and start an assembly line. I use the larger leaves and save the small leaves to bring home and make salad another time. 

Spread the cream cheese on the leaves.

Add mustard

Choose your favorite meat.

Top with avocado.

Finish with Pacific Flake.

I always used Organic & Local products when available. It's good for the economy & the community.
